SOTO JEPARA RECIPES
If you visit Indonesia, there is an area called Mayong in the city of Jepara (Middle of Java) where you can find Soto Jepara.
Soto with a characteristic clear sauce made from chicken. similar to Soto Bandung but the taste is very different. The taste of Soto Jepara is stronger and with a very savory sauce taste.
If you find it difficult to come to Jepara you can try to make it yourself at home. Here is the recipe :
Ingredients :
- Materials needed :
- 1 kg of clean free-range chicken
- 1 stalk chives (chopped)
- 1 lime (squeeze the juice)
- 2 celery stalks (finely sliced)
- 50 gr fresh sprouts
- 2 pieces of kaffir lime leaves (washed clean),
- 1/4 teaspoon pepper powder
- sweet soy sauce
- 3 red onions (finely chopped)
- 2 cloves garlic (crushed)
- enough water, salt to taste
- sugar to taste
- oil for frying
HOW TO MAKE :
- Boil the chicken that is clean until cooked and then take the broth as much as 2 liters
- Remove the boiled chicken then shred the meat
- stir-fry the mashed spices with a little oil until fragrant and put the chicken bones into the sauteed spices
- Pour the chicken stock that has been taken, wait until it boils
- Enter the sweet soy sauce, pepper powder, sugar, salt, flavoring, lime juice and kaffir lime leaves, wait until cooked
- prepare a serving bowl then add chopped chives, fresh bean sprouts, shredded chicken and sprinkled with sliced celery leaves
- Pour the gravy into a bowl and the Jepara Chicken Soto is ready to be served
