GEMBLONG RECIPES (INDONESIAN TRADITIONAL DESSERT)

This food made from white glutinous rice dough is called gemblong, but there are some who call it brittle. The splash of brown sugar that meets the savory dough of gemblong is the perfect complement.

This sweet cake in the form of small rounds covered in caramelized sugar is called gemblong. These traditional cake snacks are widely sold in the Puncak area, West Java, and are identical as souvenirs from there. gemblong on the inside there is a mixture of sticky rice and coconut.

INGREDIENTS :

  • 200 grams of white glutinous rice flour
  • 100 grams of coarsely grated young coconut
  • 1/2 teaspoon salt
  • 150 ml of warm coconut milk
  • 750 ml oil for frying

FOR GEMBLONG COATING :

  • 100 grams of sugar
  • 100 grams of brown sugar
  • 1 pandan leaf
  • 1/4 teaspoon salt
  • 150 ml water
HOW TO MAKE :

  2. Take the sticky rice dough, shape it into a flat round shape.
  3. Heat the oil, then fry the dough until golden brown on medium heat. Remove and set aside.
  4. Now make the coating dough. Cook the sugar, brown sugar, pandan leaves, salt, and water while stirring. Cook until the liquid is foamy and thick.
  5. After the coating thickens, add the gemblong. Stir well until all the coating covers the lumps. Turn off the heat, keep stirring until the coating is dry.
