ES TEBAK FROM WEST SUMATRA RECIPES

Es Tebak is a regional specialty in Indonesia, namely West Sumatra. Es Tebak itself is basically a mixed ice drink. Like ordinary mixed ice, es guess contains mixtures of several types of snacks such as chunks of jackfruit, kolang kaling (sugar palm fruit), grass jelly, young coconut meat, avocado, tape or tapai and of course Tebak itself.

Es Tebak is a type of food in West Sumatra. Tebak is made from rice flour which is shaped like noodles after cooking to resemble Es cendol.

INGREDIENTS :

For making Tebak :

  • 150 ml coconut milk, from coconut
  • 75 g rice flour
  • tsp salt
  • 25 g of starch
  • water to boil

Stuffing

  • 200 g black grass jelly, cut into 1 cm dice
  • 200 g candied fruit and fro, thinly sliced
  • shaved ice
  • 200 ml red syrup
  • white sweetened condensed milk


How to make:

  1. Guess: Put the coconut milk in a saucepan, over medium heat until it boils. Remove from the fire. Dissolve rice flour and salt with hot coconut milk (boiling), stir until it becomes a smooth and even dough. Remove from heat, add cornstarch, mix well.
  2. Put the dough into a triangular plastic bag, snip off the edges a little until a small hole is formed. Bring water to a boil in a saucepan, squirt the dough directly into the water until it is 3 – 4 cm long like noodles.
  3. Cook until the dough is cooked and floats, remove from a sieve and drain. Soak the guesses in cold boiled water so they don't stick to each other.
  4. Prepare 4 bowls / serving glasses. Enter guess, chinese boyfriend, grass jelly, and fro. Sprinkle shaved ice on top. Pour syrup and sweetened condensed milk, serve.
