ONDE ONDE RECIPES

Onde-onde is a type of market snack cake that is quite popular in Indonesia. It's easy to find in the market or on the roadside with the fried food carts. Onde-onde are round with a sprinkling of white sesame on top. Onde-onde is a traditional food made from sticky rice and wheat flour filled with green bean paste and then fried. The sizes also vary, from quite large to mini size.

Onde-onde has a dense and slightly chewy texture, which is obtained from a mixture of glutinous rice flour and tapioca flour.

INGREDIENTS :

  • 125 gr glutinous rice flour
  • 15 gr tapioca flour
  • 1/2 tsp salt
  • 40 g sugar
  • 100 ml warm water or coconut milk
  • 75 gr white sesame
  • Solid oil, for frying 

Filling:

  • 100 gr green beans, soak 1-2 hours
  • 75 gr sugar
  • 1/2 tsp salt
  • 40 ml thick coconut milk
  • 1 pandan leaf
  • 1/2 tsp vanilla powder

HOW TO MAKE :

  1. For Skin: Mix glutinous rice flour, tapioca flour, salt, and sugar, add warm coconut milk little by little while stirring gently. Knead until the dough is smooth and can be formed. Divide into 20 parts, rounded shape.
  2. For the filling: Steam the green beans until soft, mash while hot. Mix finely ground green beans with sugar and salt, pour thick coconut milk, add pandan leaves and vanilla powder. Cook over low heat while continuing to stir until the dough can be kneaded. Round shape, set aside.
  3. Roll out the skin dough one by one, give the dough the stuffed green beans, cover, glue and shape again. Try not to let any part of the contents come out. Dip in boiled water, then roll in a plate with sesame seeds until smooth. Fry over low heat until golden brown.
