LEMPAH KUNING FROM BANGKA ISLAND RECIPES
Indonesia is also famous for its fish-based cuisine.
Lempah kuning or lempah pineapple is a common dish on Bangka Island. It tastes sour and spicy and is usually eaten with rice.
INGREDIENTS :
- 1 kg of baronang fish, wash thoroughly, apply lime juice, let stand 15 minutes, then rinse thoroughly
- 1 pineapple, peel the skin and cut into pieces
- 5 red bird's eye chilies, chopped
Ground spices:
- 10 cloves bamer
- 1/4 segment of galangal
- 1 segment of turmeric
- 2 lemongrass stalks
- 5 pieces of curly red chili
- 5 red chilies
- 3 hazelnuts
- 1 tsp grilled shrimp paste
Additional Ingredients:
- 5 lime leaves
- salt, sugar, mushroom seasoning to taste
- enough water (to cover the surface of the fish)
HOW TO MAKE :
- Add enough water, wait until it boils.
- Then add the ground spices and lime leaves.
- Cook until it boils again and the aroma of the spices comes out.
- Then add fish, pineapple, chopped chili, salt, sugar, and flavoring.
- Cook until the fish is cooked through then remove and serve.
