GUDEG YOGYA RECIPES

Yogyakarta is one of Indonesia's tourist destinations which is full of charms that invites local and foreign tourists to always return there. It's not complete if you travel to Yogyakarta without enjoying its signature dish, "Gudeg".

Gudeg made from young jackfruit is an iconic food from Jogjakarta. Cooked with spices and coconut milk until it is brown in color and sweet and savory in taste.

Making your own gudeg is not as difficult as one might think. As long as you use young jackfruit of good quality and complete spices, you can get delicious gudeg. Can be made dry version or want a slightly gravy.

INGREDIENTS :

  • 1 kg young jackfruit, cut into squares and then boiled briefly with a little salt, remove and drain
  • 400 grams of brown sugar, comb
  • 4 lemongrass stalks, crushed
  • 4 segments of galangal, geprek
  • 5 bay leaves
  • 4 lime leaves
  • 1 liter of liquid coconut milk
  • 700 ml coconut water
  • 1 liter thick coconut milk
  • Salt to taste
  • 3 pieces of teak leaves
  • Boiled eggs

Ground spices:

  • 100 grams of red onion
  • 10 cloves of garlic
  • 8 grains of roasted hazelnut
  • 20 grams of coriander powder

How to make:

  1. Arrange the teak leaves in the bottom of the pot, then add the young jackfruit and all the spices. Pour in the liquid coconut milk and coconut water. Then cover again with teak leaves and cover the pot, cook until the gravy shrinks a little.
  2. After the gravy has shrunk a little, add the brown sugar, salt, and thick coconut milk. Cover again with teak leaves and cover the pot, continue cooking on low heat.
  3. Taste correction. Finally add the boiled eggs, then cover the pot again, continue to cook the gudeg until cooked and completely dry for 8-10 hours.
  4. Serve.
