AROMATIC AND DELICIOUS CHICKEN LEMPER RECIPES

This traditional food from sticky rice is usually filled with shredded or minced chicken. Wrapped in banana leaves to make the taste and aroma even more delicious. In Java, lemper is still easy to find, usually also used as a wedding snack. This food is usually used as an appetizer.

Lemper is one of the classic snacks that is classified as a market snack that is never boring. This is because of the delicious filling with the fragrant aroma of lime leaves and pandan leaves.

INGREDIENTS

  • 500 g good quality glutinous rice
  • 500 ml coconut milk
  • 1 tsp salt
  • 2 pandan leaves, cut into pieces
  • enough pieces of banana leaves.
  • Stuffing:
  • 2 tbsp vegetable oil
  • 300 g boiled chicken, finely shredded
  • 1 bay leaf
  • 3 lime leaves, finely sliced
  • 1 cm galangal, bruised
  • 1 lemongrass stalk, bruised
  • 250 ml fresh coconut milk

Ground spices:

  • 5 red onions
  • 3 cloves of garlic
  • 2 hazelnuts
  • 1/2 tsp peppercorns
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/2 tsp sugar

How to Make Chicken Lemper:

  1. Wash the glutinous rice thoroughly then soak the glutinous rice in cold water for 3 hours then drain.
  2. Steam the glutinous rice for 30 minutes then remove.
  3. Bring coconut milk to a boil with salt and pandan leaves.
  4. Pour the coconut milk into the sticky rice, stir until the coconut milk is completely absorbed by the sticky rice.
  5. Remove the sticky rice and steam it again for 30 minutes until cooked
  6. Stuffing: Saute ground spices until fragrant. Add salam, galangal, and lemongrass.
  7. Stir until smooth and add the chicken and coconut milk, bring to a boil until the coconut milk runs out and then remove
  8. Spread half the sticky rice on a flat baking sheet that has been greased with oil.
  9. Spread the chicken mixture over it. Put the remaining sticky rice on top of the chicken mixture and flatten again. Cut the lemper into 4x7 cm then wrap each piece with banana leaves.
