SOTO MAKASAR RECIPES

The city of Makassar in South Sulawesi is famous for its delicious seafood preparations. In addition, Makassar also has an iconic soto concoction, Coto Makassar. This thick gravy dish tastes savory with thick spices.

Below is the original recipe for Makassar Soto which is savory and also rich in spices.

INGREDIENTS :

  • 500 g beef
  • 500 g beef lung
  • 1 liter beef broth
  • 1 liter of rice washing water
  • 3 cm galangal, bruised
  • 2 cm ginger, crushed
  • 1 lemongrass stalk, bruised
  • 3 lime leaves
  • 2 bay leaves
  • 150 g peeled peanuts, roasted
  • Ground spices:
  • 7 cloves of garlic
  • 3 hazelnuts
  • 1 tsp pepper granules
  • 1 tsp coriander
  • 1/2 tsp cumin
  • 2 tsp salt

Complementary:
  • fried shallots
  • buras/lontong
  • red chili sauce
  • lime
HOW TO COOK : 
  • Boil the meat and lungs separately until tender. Drain meat and lungs. Set aside 1 liter of meat stock
  • Mash or finely grind roasted peanuts. Set aside.
  • Saute ground spices until fragrant. Add galangal, ginger, lime leaves, bay leaf and lemongrass. Stir until fragrant. Lift.
  • Put it in a saucepan, add the beef stock, ground peanuts, pieces of meat and lungs. Cook over low heat until the spices are absorbed.
  • Pour in the rice washing water and sugar. Cook until the gravy is thick and the spices are absorbed. Turn off the fire.
  • Serve with the Complementary.
