REFRESHING CHICKEN SOUP CALLED "SOTO KUDUS"
Soto Kudus is one type of chicken soup that is popular in Central Java, namely Soto Kudus. This soto, typical of the city of kretek, is chicken soup with clear sauce. Its signature dish is served in a tiny Chinese porcelain bowl.
Soto Kudus can be enjoyed directly mixed with rice or separated. Depends on taste. What's so fun, there are many complementary side dishes for Soto Kudus. There are cakes, fried tempeh, offal satay, quail egg satay.
INGREDIENTS :
- 1 free-range chicken, cut in half
- 2 cm galangal, bruised
- 2 bay leaves
- 2 lemongrass stalks, bruised
- 1 tbsp salt
- 4 tbsp sweet soy sauce
GROUND SPICES :
- 8 red onions
- 4 cloves garlic
- tsp pepper granules
- 2 tsp salt
Complementary:
- 200 g bean sprouts, clean
- 6 chives, finely sliced
- 2 spring onions, finely sliced
- 2 celery stalks, finely diced
- 3 tbsp fried garlic
- 3 tbsp fried red onion
- 3 limes
HOW TO MAKE :
- Cut the chicken into 4 parts.
- Bring enough water to a boil, add chicken along with galangal, salam, lemongrass and ground spices.
- Boil over low heat until the chicken is soft.
- Remove the chicken, drain the chicken until dry.
- Bring the broth back to a low heat. Add soy sauce. Cook until boiling then remove.
- Fry in hot oil and plenty of it until slightly dry. Remove, shred the meat.
- Serving: Put the bean sprouts, shredded chicken and other accompaniments in a serving bowl.
- Drizzle with hot broth and serve.
