SOTO BETAWI RECIPES

Ingredients :

  • 500 g beef brisket, cut into pieces
  • 200 g beef tripe, boiled, cut into 2x2 cm
  • 200 g beef lung, boiled, cut into 2x2 cm
  • 3 tbsp Sweet Soy Sauce
  • 3 cm cinnamon
  • 1 tsp nutmeg powder
  • 4 cloves
  • 3 lemongrass stalks, bruised
  • 5 lime leaves, remove the bones, sliced ​​lengthwise
  • 2 cm galangal, bruised
  • 4 tsp salt
  • 2 bay leaves
  • 1 tsp sugar
  • tsp pepper powder
  • 500 ml coconut milk from 1 coconut
  • 2 tbsp oil, for frying
  • 2 L water

Ground spices:

  • 12 red onions
  • 6 cloves of garlic
  • 3 pecans, roasted
  • 2 cm ginger
  • 1 tsp coriander powder

Supplementary material:

  • 2 tomatoes, diced 2 cm
  • 2 spring onions, thinly sliced
  • 100 g fried red onion
  • 50 g fried chips
  • 4 limes, cut into 2 parts
How To Cook : 

  1. Boil water and meat until the meat is cooked and tender. Cut the meat into 3x3 cm cubes.
  2. Strain the beef stew broth, bring to a boil again with the meat, lungs and tripe.
  3. Heat the oil, fry the ground spices with nutmeg, cloves, cinnamon, lemongrass, galangal, lime leaves, and bay leaves until fragrant. Pour the stir-fried spices into the meat stew, mix well. Cook over medium heat until it boils.
  4. Pour in the coconut milk, Sweet Soy Sauce, salt, ground pepper, and sugar. Cook until done.
  5. Arrange the tomatoes in a bowl, pour the soup, serve with other complementary ingredients.
