SAVORY AND TASTY SOTO MEDAN RECIPE

INGREDIENTS :
- 1 chicken, cut into 4 parts
- 3 tbsp vegetable oil
- 5 grains of cardamom
- 2 pieces of flower
- 2 bay leaves
- 2 pieces of kaffir lime leaves
- 1 lemongrass stalk, bruised
- 1 liter medium coconut milk
- 500 ml thick coconut milk
Ground spices:
- 10 red onions
- 6 cloves of garlic
- 2 hazelnuts
- 1 tsp cumin
- 3 cm old turmeric
- 2 cm ginger
- 1 tsp pepper granules
- 2 tsp salt
Stuffing:
- 100 g bean sprouts, brew hot water, drain
- 1 potato, fried, cut into pieces
- 50 g sun, brewed, cut into pieces
- 3 pieces of cabbage, finely sliced
- 2 boiled chicken eggs, peeled
- 1 red tomato, cut into pieces
Complementary:
- 2 tbsp finely chopped scallions
- 3 tbsp fried red onion
- 2 limes

HOW TO MAKE :
- Clean the chicken and drain it. If there are claws or chicken heads can be used.
- Bring the water to a boil, add the chicken pieces and reduce the heat. Boil until the chicken is half cooked. Lift and drain.
- Saute ground spices until fragrant and cooked.
- Add cardamom, star anise, lime leaves, bay leaf, and lemongrass. Stir until fragrant. Remove, put in a saucepan.
- Add the chicken pieces, coconut milk and cook on low heat until the chicken is soft.
- Pour in the thick coconut milk and stir until it boils and the spices absorb into the chicken.
- Turn off the heat, remove the chicken, coarsely shred the meat.
- Serving: Place the bean sprouts, suntan, cabbage, potatoes, tomatoes and shredded chicken in a bowl.
- Add the chicken eggs and then pour the hot sauce.
