GALANGAL FRIED CHICKEN RECIPES

INGREDIENTS :
- 500 grams of chicken that has been cut into pieces
- 100 grams of galangal, grated
- 1 lemongrass stalk, bruised
- 2 bay leaves
- 2 lime leaves
- 2 tablespoons cooking oil (for frying)
- enough water
- salt to taste
- enough sugar
Ground spices:
- 4 red onions
- 2 cloves of garlic
- 2 hazelnuts
- 2 finger turmeric
- 2 finger ginger
- 1 teaspoon coriander
HOW TO MAKE :
- Wash the chicken that has been cut into pieces, then set aside.
- Heat cooking oil in a frying pan, then stir-fry the ground spices, grated galangal, lemon grass, bay leaf, and lime leaves until fragrant and changing color.
- Add enough water. After that season with salt and a little sugar.
- After the galangal stir-fry boils, add the chicken. Cook until the chicken is cooked and the water is completely dry.
- Separate the chicken and seasonings, then fry the chicken until golden brown.
- Fry the galangal seasoning separately. Cook until golden brown, then remove and drain the oil.
