BIKA AMBON RECIPES (INDONESIAN DESSERT)

 If you come to visit Indonesia and want to bring souvenirs of Indonesian sweets that don't go stale easily, the answer is "Bika Ambon".

But there's nothing wrong with trying to make your own Ambon bika at home, this dessert typical of the city of Medan, the capital of North Sumatra, has a soft texture with a sweet citrus aroma.

INGREDIENTS:

Coconut milk ingredients:

- Take 1000 ml of coconut milk from 2 coconuts

- 3 pandan leaves

- 10 lime leaves

- 1 lemongrass stalk

- 2 segments of turmeric cut into pieces

- 1/2 tsp salt

Cake Ingredients:

- 10 egg yolks

- 2 whole eggs

- 400 ml of coconut milk

- 300 gr sago flour

- 300 gr sugar

Source material:

- 1 tbsp flour

- 6 tbsp warm water

- 1 pack of fermipan

- 1 tsp sugar

HOW TO MAKE :
  1. Cook all the coconut milk ingredients over medium heat until there are only 400 ml. Remove, cool.
  2. Mix it into one ingredient. Leave it for 10 minutes.
  3. Beat eggs and sugar with a mixer until sugar is dissolved.
  4. Lower the speed of the mixer, add the coconut milk and sago flour alternately until it runs out. Stir well.
  5. Enter the source. Stir again. Turn off the mixer and sieve the dough.
  6. Beat the dough with a wooden spoon for at least 15 minutes.
  7. Cover the container, let the dough rest for about 3 hours.
  8. Prepare an 18x18cm pan. Spread margarine and sprinkle with flour. Heat the pans at the same time as heating the oven.
  9. Pour the batter into the hot pan. Bake at 180C for 40 minutes. Leave the oven slightly open for the first 30 minutes, then close the oven tightly and bake until done.
  10. Remove and cut into pieces after the cake has cooled. Serve.
