AYAM TANGKAP FROM ACEH
Ayam Tangkap is one of the typical dishes made from chicken from Aceh (Sumatra Island). Have you ever tried it? This is a fried chicken preparation that is a bit different from the usual.
The chicken is cut into small pieces and fried with various herbs. The taste is really unique and savory. Here the recipe :
INGREDIENTS :
- 500 grams of chicken meat, cut into pieces and wash clean
- 1 segment of galangal
- 1 pandan leaf, cut into pieces
- 2 pieces of koja bay leaves or curry leaves
- enough water
Ground spices:
- 4 cloves garlic
- 1 teaspoon peppercorns
- 1 teaspoon coriander
- 1 piece of ginger
- 1 segment of turmeric
- 2 teaspoons salt / to taste
Complementary Seasonings:
- 3 large pandan leaves, cut into pieces
- 4 pieces of curry leaves
- 5 lime leaves
- 1 lemongrass stalk, bruised and chopped
- 7 green chilies
- 3 cloves of red onion, thinly sliced
HOW TO MAKE :
- Mix the chicken with the ground spices. Add galangal, pandan leaves, and koja/curry bay leaves.
- Pour in the water until the chicken is completely submerged. Stir well and cook the chicken until cooked through, about 30 minutes. Stir occasionally to check for doneness.
- Prepare cooking oil and complementary seasoning. Fried chicken ungkep together with complementary spices. Fry until the chicken is browned, then remove from the cooking oil.
